Where are you?

Blackened Salmon

OMG…I purchased keta salmon at Vons for $2.50 lb. YAH!

Remember how I told you I grew up on burned food?  Well, this one is for you, mom ;-)

Blackened Salmon adapted

2 tsps. each of dried parsley, oregano, and basil
1 teaspoon cracked black pepper
2 tablespoons paprika
2 tablespoons salt
2 tablespoons cayenne pepper

Mix all ingredients into a bowl.

Place pan on high heat with a touch of PAM.

Dip each fillet into mixture  coat both sides

(the moisture from the fish is enough to adhere spices)

Set each piece into the pan and turn flame to medium high for about 2 minutes each side. Then place into a 400 degree oven to finish cooking for about 6 minutes.

Spicy, red, and hot…like me :-D

Spring Rolls

Let’s be honest…they look more like taquitos than spring rolls but DH rated them a 5 plater!
I gave the shrimp a bath in boiling water for about 3 minutes, then shocked with ice
The flesh of the rolls. I know, it’s not very traditional, however…you know what I say…the more vegetation the better!
OMG, have you ever tried to roll these SOB’s?  The rice paper comes in rounds, and they are similar to wax paper.

We dipped them in peanut hoisin sauce

Chocolate and Tampons @ Wags

What a perfect combo!

Usually, I don’t buy candy…today my students are graduating.  Since it is easier to impart calories, fat, and empty calories rather than education. I’ll send my goodbyes to them with a piece of bliss.

Thanks to all these tampon deals, I believe I am set until I hit menopause. :-D

Baked Zucchini

Recipe:Baked Zucchini

I followed the recipe except I sprayed PAM on the spears instead of using additional oil.  I also cut my zucchini into spears, because I am lazy, and didn’t want to individually coat each coin.

See I just made a vat of mixture and tossed them.
OOh, this week at the Mexican market zucchini is only 2lbs for .99! Yippeee!
Let them take a bath in the sand then, throw them into the oven for about 1/2 hour at 450 degrees.

Tastes really good with .25 BBQ sauce!

Healthier Potato Skins

Recipe: Potato Skins     Rating:

Super Easy to Make  DH-(I swear the easier the recipe, the better the rating)

1.Wash and pierce about 8 potatoes

2. Throw into microwave for ~ 10 minutes

3.  When cool, scoop out flesh
4.  I microwaved broccoli for about 2 minutes, then threw it atop the spud

5. I used fat-free, and reduced fat cheeses

6. Sprayed them all with PAM

7. Placed in a 375 degree oven for about 10 minutes, then turned up to broil to      make them better

8. Served with fat-free sour cream.

Want to make it healthier?

Use sweet potatoes instead

Only use fat-free cheese
